🍰 1. Chocolate Sponge

  1. In a bowl, whisk yogurt and sugar until smooth and creamy.

  2. Mix milk, vinegar, and vanilla essence in a separate bowl. Add it to the yogurt mixture and combine well.

  3. Pour in the oil and mix gently.

  4. Sift in flour, cocoa powder, baking powder, baking soda, and salt. Fold into a thick, smooth batter.

  5. Dissolve coffee in hot water and pour it into the batter. Mix until combined.

  6. Pour into lined baking tins and bake at 180°C for 10–15 minutes, or until a toothpick inserted comes out clean. Let them cool completely.

  3. Let it cool completely before using.

  2. Pour over chopped chocolate and let it stand for a minute.

  3. Stir until glossy and smooth.

  4. Chill for 30 minutes to thicken slightly.

  1. Gently fold the whipped cream into the ganache.

  2. Mix just until light, fluffy, and mousse-like. Avoid overmixing.
