🍰 1. Chocolate Sponge
Ingredients

Maida (All-purpose flour) – 250 g

Caster sugar – 250 g

Yogurt – 200 g

Milk – 200 ml

Hot water – 150 ml

Instant coffee – 1 tsp

Vinegar – 1 tbsp

Vanilla essence – 5 ml
Method

In a bowl, whisk yogurt and sugar until smooth and creamy.

Mix milk, vinegar, and vanilla essence in a separate bowl. Add it to the yogurt mixture and combine well.

Pour in the oil and mix gently.

Sift in flour, cocoa powder, baking powder, baking soda, and salt. Fold into a thick, smooth batter.

Dissolve coffee in hot water and pour it into the batter. Mix until combined.

Pour into lined baking tins and bake at 180°C for 10–15 minutes, or until a toothpick inserted comes out clean. Let them cool completely.
🥛 2. Cocoa Milk Infusion (For Soaking)

Method

Warm the milk slightly.

Add cocoa powder and sugar. Whisk until smooth and fully dissolved.

🍫 3. Dark Chocolate Ganache
Ingredients

Dark chocolate – 285 g

Fresh cream – 285 g
Method

Heat the cream until very hot (but not boiling).

Pour over chopped chocolate and let it stand for a minute.

Stir until glossy and smooth.

Chill for 30 minutes to thicken slightly.
🍫 4. Ganache → Chocolate Mousse
