Step-by-Step Instructions
Step 1: Make the Mint Mayonnaise

Combine mint leaves, coriander, hung curd, paneer, garlic, olive oil, and cashews in a blender.

Blend into a smooth, creamy paste. Adjust salt and pepper to taste.

Store in an airtight container in the refrigerator (keeps fresh for up to 3 days).
Step 2: Prepare the Nutri Filling

Boil the soya chunks in water for 7–8 minutes until soft.

Drain and squeeze out all excess water thoroughly.

In a mixing bowl, add boiled nutri, chopped onion, capsicum, salt, pepper, oregano, and chilli flakes.

Stir in 2 tablespoons of the mint mayo for a creamy, herby touch.
Step 3: Assemble the Sandwich

Take 2 slices of multigrain bread. Spread ½ tbsp of mint mayonnaise on one slice.
