How to Make No-Bake Mango Cheesecake in a Jar

Step 1: Prepare the Biscuit Base

  1. Crush the digestive biscuits into a fine crumb using a rolling pin or food processor.

  2. Mix the crushed biscuits with melted butter until evenly combined.

  3. Divide the mixture into 2 serving jars and press it down firmly to create the base layer.

Step 2: Make the Cheesecake Cream

  1. In a bowl, beat the cream cheese, icing sugar, and vanilla essence (if using) until smooth and creamy.

  2. In a separate bowl, whip the cream until soft peaks form.

  3. Gently fold the whipped cream into the cream cheese mixture until fully combined.

Step 3: Prepare the Mango Layer

  1. If using fresh mangoes, blend them into a smooth puree.

  2. Taste the puree and, if needed, mix in honey or sugar for added sweetness.

Step 4: Assemble the Layers

  1. Spoon a layer of the cheesecake cream over the biscuit base.

  2. Add a layer of mango puree on top of the cream.

  3. Repeat the layering with another layer of cheesecake cream followed by more mango puree.

  4. Finish with freshly chopped mango cubes on the top.

Step 5: Chill and Serve

  1. Cover the jars and refrigerate for at least 2 to 3 hours.

  2. Once chilled and set, serve directly from the jars and enjoy.
